‘Porto Aperta’ is a culinary experience that takes you on a journey through the narrative of how the tomato found itself in Europe, travelling from Tenochtitlan, to Spain and Naples. The dishes each day represent the colonial history while also paired along side contemporary cuisine of West Africa, this is used to reveal the dark underlying fact of the contemporary slave trade which revolves around our fruit and vegetable production is very much alive. The dishes echo the history and horrors behind our fruit and vegetable aisles as I use produce sourced from independent wholesalers.
